Introducing our new executive chef

Jake Kedward has recently been appointed as Executive Chef at The Kings Head Inn at Llangennith. Gower. Since taking over, he has made his mark in introducing a fresh and exciting approach and providing excellent daily specials. He has also been very creative in implementing seasonal special events and restaurant menus.
Jake, married with two children, has been a chef for 15 years and stumbled into the trade as a youngster, while working in a kitchen doing dishwashing, and often helping the chefs out, he soon discovered he had the aptitude for cooking. From small beginnings, Chef then began working his way through the ranks at various establishments and has worked in many restaurants/hotels in many parts of the country from Swansea, Cardiff, London, Cotswolds and Bath.
Inspiration comes from two particular chefs Magnus Nelson of Sweden who is head chef at the restaurant Fäviken in Sweden, and Thomas Keller from America who is not only a chef but restaurateur, a cookbook writer. He and his landmark Napa Valley restaurant, The French Laundry in Yountville, California, He currently holds seven Michelin stars! However, like Jake, he also began his career as a dishwasher!
Presentation of food is as important as cooking, but the taste is paramount. Jake never gets bored in making food at all, as long as it is tasty. Jake says that ‘You learn something new every day in this business, and improve every day’, but the one ingredient he couldn’t do without is Salt!
There are so many different styles, trends, and gadgets to do with cooking these days asked what he thought was possibly the most overrated he answered ‘water bath’. They do have their uses, but they are something that can actually alter the texture and taste of the food, and he is not keen.
Asked what is his favourite food, without hesitation he answered Fish! On the other hand, he does not like liver!
He is a great believer in using local produce as much as possible and is delighted to be working in the heart of Gower where there are many places to source these ingredients. Expect to see some subtle menu changes in the coming weeks, and the specials board is where he will get to play! Now a family man, Jake is looking to make his mark here at the King’s Head.

Following St David’s day expect to see a specials board full of Welsh delicacies including Venison from the Welsh Venison centre!

    We’ve recently stayed, sadly only for two nights but it is our third visit and we will definitely be back.

    Loved the breakfasts, all freshly made and the dinner menu is good and varied and look out for the specials, loved the mackerel the other night.

    An excellent establishment, glad we too were recommended to come to you.
